My smiley little baby

Laken has been dealing with ear infections the last few months. She never had any as a baby, but suddenly we can’t get rid of them. Poor little girl has been on antibiotics this time for 18 days so far and will be on them for a total of 40 days. After todays appointment we found out that she does still have fluid in her one ear, but it can take up to 6 weeks for it to go away. If she shows any more signs of infection she will be going to the ENT next She must take pain so well because I really have a hard time knowing when her ears hurt. She doesnt pull at them she just get super CRABBY. I know it is a simple surgery, but I think any surgery is scary when it involves your own child! I suffer from major anxiety so this will be really awful for me if we have to go through with the tubes. Then in a few months Mya will be having eye surgery which just scares me to pieces. She has lazy eye and it floats a lot. She is also pretty blind in her one eye. Anyway here is one of Laken while waiting for our favorite PA to come in and examine her

Yes, their eyes are way over done. I had happy dodge the eye syndrome today Oh well I am way to lazy to go back and fix it.

Italian Hamburgers

So I scoped out this recipe yesterday for dinner. It said to serve over spaghetti or rice, but I think It would have been really good on a toasted bun with melted mozzarella cheese. I didn’t have the cheese so I did make it for the spaghetti. Though while eating it, I realized I had only made a hamburger meatball. I am sharing this anyway because I can’t make meatballs and I figure maybe someone is a sucky cook like me and this could help them out to.

6 Tbsp dry bread crumbs
3/4 tsp. dried Oregano
1/3 c chopped onion
1/4 to 1/2 tsp salt
1/3 c chopped green pepper ( I didn’t add this to ours because I am the only one here that likes them)
1 garlic clove minced
Mix the above ingredients well

add 1 pound ground beef and 3 TBSP grated Parmesan cheese and mix well
Make patties and brown 2 minutes on each side

combine 1 15 ounce can of tomato sauce and 3/4 tsp Italian Seasoning.

Pour over patties reduce heat and cover. Simmer for 10-15 minutes.

then  you are suppose to add Parmesan on top

I added a jar of spaghetti sauce to this sauce.

Here is when I actually realized that I had only just made one  friggin huge ass meatball. LMAO

Mya’s masterpiece

Mya was extremely proud of this picture she drew today.  She said it was the best one she ever made and that school is really teaching her a lot When she is excited, she makes fists down by her hips and wiggles them. It is super funny and cute and that is what she was doing while drawing this picture. Laken was erasing her pictures all day though and ended up in time out about 4 times today. She was being a big stinker.

Impossible Taco pie

For Christmas my Mom bought me a cookbook.  So I tried a new recipe yesterday.  Impossible Taco Pie.  It was pretty good, though I think I needed to cook it a bit more then the recipe called for.  Both girls loved it and ate every bite so that makes it a winner for me.

Ingredients:

1 lb ground beef

1/2 c chopped onion

3 eggs

2 tomatoes sliced

1 c cheddar cheese grated

3/4 c Bisquick baking mix

1 envelope taco seasoning

1(4 0unce) can chopped green chilies drained

1 1/4 c milk

(I did not use the tomatoes or chilies because we are picky, picky, picky here in the Havyer household)

Heat oven to 400 degrees and grease a pie pan.  The recipe calls for a 10 inch, mine was a little smaller and I had an overflow problem, but it still worked.  Cook the onion and hamburger until brown.

DRAIN AND THEN ADD IN THE TACO SEASONING WITH THE AMOUNT OF WATER THAT IS CALLED FOR ON THE PACKAGE.(MY RECIPE DIDN’T SAY TO DO THAT, BUT I AM GUESSING IT MEANT TO?)

COOK UNTIL IT THICKENS

SPREAD INTO THE PIE PLATE

THEN TOP WITH THE CHILIES IF YOU WANT THEM.
BEAT MILK, BAKING MIX AND EGGS UNTIL SMOOTH

THEN POUR INTO PLATE

BAKE FOR 25 MINUTES(I THINK NEXT TIME I WILL BAKE IT LONGER)
TOP WITH TOMATOES AND CHEESE AND BAKE FOR 8-10 MINUTES LONGER. THEN COOL FOR 5 MINUTES. SERVE WITH SOUR CREAM, SHREDDED LETTUCE, CHOPPED TOMATOES AND CHEESE IF DESIRED.

I feel pretty guilty that I haven’t posted the last few days, but I am just so exhausted and can’t seem to get in the mood to do anything.  We had a FANTASTIC Christmas.  I would say the best of my entire life so far.  Mya is the most grateful little girl I ever seen in my life.  When she opened her presents at home and seen that she did not get the cupcake maker she asked for, she said’ “Maybe Santa couldn’t bring me the cupcake maker because he needed to give it to someone else!” and then said,”  That’s okay cause I got lots of things I did ask for.”   This little angel says so many things that make me teary eyed and proud to be her Momma. Little did she know she had the cupcake maker coming to her at Grammy’s house

She also got a pink guitar that I think is her most favorite gift of all.  She was sitting on my steps and she said ,”Mom, pretend you do not know me and ask me what I am doing.”  So I did and she said,”  I have a gig coming up and I am practicing.”  LMAO

Laken enjoyed Christmas and the toys, but still wasn’t into the unwrapping yet.  So here are some pics from the last few days.

Pulled heart strings and an order of French Fries

Mya’s last day of Pre school was today.  Last day until the new year   She brought home an ornament they made at school and it made me a little teary I must say.

It makes me so sad to think that next year her little hand will be so much bigger

Then my friend Terri informed me that her Mom likes my blog   I was really excited because I always feel like my blog is so boring compared to the others I read.  She also said her Mom tried my …..well….not my pork chop recipe, but the one that I posted a few days ago and she really liked it   THANKS TERRI’S MOM.  SO I felt the need to post the french fries I made today.

These are not just any french fry though.  If you ask Mya she will tell you they are better then McDonalds.  That is a huge compliment coming from a 4 year old.

She does really fun things with her kids.  SHe has a blog entry where her family did backwards day.  I copied her today, but she was a little more involved then I.  I had all kinds of pictures, but some how lost where I saved them   My girls had a blast though.  We put our clothes on backwards and we ate our dessert before eating dinner and we ate underneath the table.  The girls asked if we could do it more often because they thought it was so much fun So I think once a month We will do backwards day.  Here are picture I took tonight that I can find.  THey just do not have anything to do with backwards day.

who needs a carnival?

I did so well with not baking anything yesterday.  That was until after dinner when my husband came up with the wonderful suggestion of funnel cakes.  Hell yeah!.  So off into the kitchen I went to make something that is only going to add onto this lovely muffin top I sport.    Was it worth it?  YES at least until I get on the scale again to see it has gone up another few pounds.

I was awakened by the voice of my oldest Princess this morning.

Mya:  Mommy, can I watch my cartoons?

me: Sure

Mya: can you make me breakfast?

Me:  SUre, what would you like?

Mya: The cereal I had yesterday

I go to the kitchen and get a bowl and start pouring, but something doesn’t sound right.  It is much different sounding then little cheerios hitting the bowl.  I look down and see that I am pouring the box of cheez-its.(kind of reminds me of my school days where I woke for school, would go brush my teeth and find that I put hairspray or soap on my toothbrush).  So I put the cheez-its back and pour the real cereal this time.  I Pour it all over the table.  Yep, this day is starting off so well.

Laken now gets up and wants cereal and I pour her a bowl.  This time I did it right except for I poured the milk all over the table this time.  It sure is going to be a fantastic day.  I can tell!

Switching it up today

I didn’t make anything exciting today.  I did bake 6 dozen chocolate chip cookies and for dinner I made spaghetti.  It was so hard to open a jar of sauce and a can of tomato paste, boil water and add some noodles.  But a mom’s gotta do what a mom’s gotta do right?  My girls still thought it was an awesome dinner though because I am Mom and as Mya says, “you are the best mommy I ever had.!”  LOL!  SHe cracks me up.
